First. Retaining his human figure, Helios' skin loses color until it's a pale, smooth white. He loses his hair, his eyes become fully dark; he enters a zombie-like state in which any expression of personality fades away and hands control over to instinct.
The palms of his hands open up and become alien-like mouths. Inside there are fangs made to easily penetrate skin, human and animal, to draw and consume blood into Helios' body. He will typically only consume the blood of one individual and initiate the second stage.
Second. From the blood's DNA, Helios starts to gestate a mutation inside his chest. If the blood is consumed from a cursed individual, this will breed a mutated version of the monster they turn into; if consumed from an animal or creature, it will be a mutated version of it as well. The creature will typically take a few hours to develop enough to act independently, marking the beginning of the third stage.
Third. As the lifeform develops, an opening forms on Helios' chest in a cross-section. Once it's ready, the chest blooms open and an infant form of the mutated monster comes out. As soon as it exists independent of Helios, his humanoid body becomes permanently inactive. While it may seem that he has died, it's more akin to shedding skin: Helios is now the mutated monster that quickly grows into its final form.
Final form. Will be a case-by-case basis, depending on what or who he consumes blood from. Every mutated form should be a simplified version of the monster he's mimicking and will typically maintain the white/smooth appearance regardless of the type. Any abilities that the original person/creature has will also be mimicked but toned down by default.
Any form stolen from PCs and NPCs alike would take place with prior agreement with the players and/or plot approval.
